Gorraasa

Ingredients:  
500g of wheat flour
1/2 tsp baking powder
500ml water
tsp salt







Sift flour into bowl.  Add baking powder and salt and stir in water until thick batter.  Pour ladle-full of
batter onto non-stick flat frying pan and flatten out until evenly spread.  Fry at medium heat and flip
when golden on one side.
Highly recommended with dama

Gorraasa be Dama

Ingredients:  
6 onions
4 tbsp tomato paste
1/3 cup oil
3 cloves of crushed garlic
250g beef steak
3 cups water
3 tomatoes
1/2 green pepper
1 tsp salt
1 tsp cardamom
1 tsp cinnamon  



Chop onions and put in pot and fry in oil at medium heat.  Keep covered, stirring occasionally.  Add
water and cover, leaving on medium heat for 5-10 minutes until water is almost evaporated.  Lightly
blend onions and return to pot and add chopped tomatoes.  
Chop steak into small pieces and add to pot with chopped pepper, salt, cardamom and cinnamon.  
Cover and leave for 3 minutes.  Add tomato paste and stir, adding water until smooth and runny.  
Cover and leave to simmer for 10 minutes adding more water occasionally.  Stir in crushed garlic.


Dama be Potaatas

Ingredients:  
6 onions
4 tbsp tomato paste
1/3 cup oil

1 tsp cardamom
1 tsp cinnamon
2 potatoes



Chop onions and put in pot and fry in oil at medium heat.  Keep covered, stirring occasionally.  Add
water and cover, leaving on medium heat for 5-10 minutes until water is almost evaporated.  Lightly
blend onions and return to pot and add chopped tomatoes.  
Peal and chop potatoes and fry potatoes until golden.

Chop steak into small pieces and add to pot with chopped pepper, salt, cardamom and cinnamon.  
Cover and leave for 3 minutes.  Add tomato paste and stir, adding water until smooth and runny.  Add
potatoes, cover and leave to simmer for 10 minutes adding more water occasionally.  Stir in crushed
garlic.


Fuul

Ingredients:  
500g fuul musri (greenish-brownish-pooey-coloured beans)
1 tbsp salt
2 dates (optional)
1/2 cup sesame seed oil
1 tomato (optional)
1 onion (optional)
1 green pepper (optional)
50g jibna (feta cheese)
1 tsp shottar - chili powder (optional)
2 eggs (optional)



Soak beans in water for at least 3-hours.  Drain beans and put in water and cook in pressure cooker
until soft.  Pour into a bowl and lightly mash with an empty Pepsi bottle.
Add chopped tomato, onion, green pepper, fried egg, salt, jibna, oil and shottar if desired.

Serve with bread and tamia.  For bosh, put pieces of bread in a bowl and pour fuul over it.
